When we think of Japanese Don, we often envision it in a mall restaurant, eaten alongside brothy Miso soup and free-flowing green tea. However, Don.档 (pronounced ‘don dung’) brings the best of Japanese fine dining into your neighborhood Kopitiam.
The stall, located in the heart of town, serves delicious bowls of don (Japanese rice bowls) paired with different ingredients to suit your preferences. The stall’s specialty is in the way their meat is prepared – all the meat they use is placed in vacuum packs before being cooked. This way, the meat maintains all its juices and its texture. You will surely taste the premium quality of this sous vide method of preparing meat.
We tried out three different Don at Don.档, each offering their own unique meat to accompany the soft, fragrant Japanese rice and a beautifully crafted onsen egg, with its yolk oozing out with the slightest poke.
Sio Bak Don
The most budget-friendly option, the Sio Bak (Pork Belly) Don ($8.90), offered us crunchy pork belly slices that satisfied our mouth with each savory bite. This is the go-to option for lovers of char-siew and is very well-adapted for the Singaporean taste buds.
Wagyu Beef Don
Perhaps the most luxurious one is the Wagyu Beef Don ($12.90), their signature Don. Each bowl is garnished with luxurious beef in bite-sized slices and a mouth-watering donburi sauce. This is a great choice for those who love premium beef or would like to treat themselves to a luxurious yet relatively affordable meal.
Mentaiko Salmon Don
Finally, the Mentaiko Salmon Don ($9.90), made from fresh salmon and topped with Mentaiko (cod roe) sauce, will greatly appeal to lovers of the salty river tastes. This revitalizing dish will surely perk you up with its wonderful (and very popular) Mentaiko sauce.
